This has a lovely coconut smell and light coconut flavor but I only noticed the slight flavor on fried eggs and then just the whites. I have used it in smoothies, to fry chicken and other meats and veggies or anywhere you would use butter. I also use this as a hand and skin conditioner/ lotion. I would suggest keeping this in the fridge after opening. I kept the first jar in my pantry and noticed after a couple of days the coconut scent was gone and after two weeks it started to smell a little off, the taste was fine but I did start putting it in the fridge after I noticed the off smell. It is harder to get the chilled oil from the jar so I put it in mini loaf pans or a brownie bites pan and refrigerate until it is hard, remove from pan by placing pan in a shallow sink of hot water for 10 to 20 seconds ( depending on how hot your water is), the water only needs to be half way up the side of the loaf pan. The oil has a low melting point so the hotter the water the less time needed to loosen the bars from the pan. Invert the pan onto a cookie sheet, chill loaves on cookie sheet for 10 min. ( or place in freezer for 2 min.). Once the loaves are good and solid again wrap in wax paper or place in ziplock bag and store in fridge or freezer. You can then take out what you need for that day and the rest stays fresh!Update: 9-27-13. I have received two more jars and have found neither one of them has needed to be refrigerated. I do make sure I do not cross contaminate and that the jar is stored in the pantry away from the heat of the stove and the sunlight that streams through my kitchen window in the morning. I'm not sure if I just got an old or mishandled jar or if I introduced something into the oil by cross contamination. Also, it is an organic, raw oil and like all oils it will go rancid over time, so I am chalking the first jar up to being transported in hot tractor trailers and my own mistakes. If you don't use a lot of this oil I would suggest putting some into a small container like a baby food jar and refrigerating the rest, that way you know it will be good when you need it. I also keep a separate jar to use on my skin, I used an empty face cream jar, cleaned it, filled it with coconut oil, chilled it for 24hrs to solidify it and as long as the room temp stays below 76 degrees it will stay simi-solid. It will liquify on your skin, so a little goes along way.I try many brands of coconut oil. This has great flavor and my food tastes fantastic. If you like coconut flavor in your oil. I find the residual flavor of coconut undesirable for many applications, such as frying eggs. My wife likes to spread it on toast, but I am tiring of the persistent coconut taste intruding. This brand says it is "cold-pressed and unrefined". I think the other brand said it was "expeller" processed (not sure what that means), but it did not have any flavor - very neutral taste. That's what I prefer. One note, this oil is not suitable for high temperature cooking; all brands that I know of say use medium heat of 350 degrees.I usually buy this product at Sam's but I think they have discontinued it. :( I don't mind paying a little more, this coconut oil is really good. I use it a little for cooking, but not much. I use it mostly for a facial moisturizer and oil pulling. It does have a hint of coconut smell to it and if I put in a cake or cookie recipe, my family can spot it a mile away that I've added coconut to it. Not that it's powerful, my family is pretty sensitive to it.
